Chilli Bean and Mince Pie

Serves 4
2 tsp oil
1 onion finely chopped
2 cloves garlic crushed
600g beef mince
400g can diced tomatoes
1tsp chilli seasoning
400g can red kidney beans
½ pkt tomato soup
1 sheet flaky puff pastry
Directions
Preheat oven to 220 degrees. Lightly grease the rim and side of 1.5 litre oven proof dish. Heat oil in saucepan, add onion and garlic and cook over medium heat for 2 -3 minutes, or until onion soft. Add the mince, stirring to break up lumps. Cook for 5 minutes or until meat browned. Stir in diced tomato, chilli seasoning, beans, and tomato soup mixed in 1 cup of water. Bring to boil and simmer for 5 minutes. Pour the mixture into the dish and top with a sheet of pastry. Pressing the edge with a fork to seal. Trim the edge and cut small cross in centre to allow steam to escape. Bake for 15 to 20 minutes until the pastry is golden brown.
Variations
CRISPY POTATO TOP:
Instead of pastry you can have a crispy potato top. Thinly slice 4 medium potatoes, mix with 1.5Tbsp and salt and pepper. Grate 100g cheese. Make one layer of potato slices, then put cheese on top and then one more layer of potato slices. Cook pie covered with tinfoil on 200 degrees for 30 minutes, put up to 230 degrees for further 20 minutes till it goes brown and crispy.
CHILLI CON CARNE:
Serve Chilli Bean mixture on rice
NACHOS:
Put lettuce tomatoes and other salad veges in bottom of Nachos, add Chilli Mince and Bean mixture and top with grated cheese. Can serve with tomato sauce/ sour cream
CORN CHIPS:
Serve Chilli Mince and Bean mixture with side salad, sour cream and corn chips.
